I fully understand that. Seen it too many times as well where people lock their arms straight, its awful!! But entry level bikes are the honds CBFs, kwack Zs and whatever else they have for 250/ 300cc, not something that has got the RR model in it.
But my own opinion of it

Part of that is because everything else is smaller but the rider remains the one constant. They have to finagle the ergonomics a little more than usual.

I had a ninja 300 for a day earlier in the year.
These smaller bikes are aimed more at the Asian market where they're massive sellers.

Didn't realise that they were aimed for asian market, why can't we get a nice British version, kinda like how the Japs have their own versions of cars. Slightly tweek things here and there

We had the import 400s which were screamers. Why don't they do that again, so much fun and always felt like a hoot when you swung your leg over. I want them back

They were around because of the licencing laws in Japan. It was really hard to get a licence to own anything bigger than a 400cc.

I don't mind that. Japs had a great time on those things I bet! My 400RR was a cracker. Wish they were modernised 4 cylinder screams 100brake superb.

I don't believe that would have the same feel as a inline 4 screamer. It may very well be good but don't think it would be that good in my opinion.
