It even sounds like you don't have a Cush drive in the sprocket carrier at all? Has it fallen out during fitting? Depends on severity but StMarks makes a very good point to check IMO.

Can't remember exactly but think the stat is full open around 78c. So if your moving at a fair rate it shouldn't go much above that even on a hot day. If your stopped and there's no air flow over the rad it will go up to 105 fairly quickly and then back down to 100 when the fan comes on. ...
